Fullkornsdinkel-pizza. Wholegrain spelt pizza.

Igår tog jag på mig bagarmössan och den italienska lösmustaschen och gick lös på delikatesserna som jag grävde fram i kylen. Detta resulterade i fantastiskt goda och nyttiga pizzor. Jag löste upp 50 gram jäst i 3 dl ljummet vatten, adderade 3 msk olivolja, lite salt och ungeför 6-7 dl dinkelfullkornsmjöl. Jag lät jäsa under bakduk i 20 minuter. Sedan kavlade jag ut små "runda" fina pizzor och fyllde dem med god topping. På hälften av pizzorna gjorde jag en tomatsås av krossade tomater som jag lät sjuda i ungefär 15 minuter på spisen tillsammans med fräst vitlök och gul lök, lite färsk basilika och såklart salt och peppar. Jag toppade pizzorna med tomatsåsen och lite riven ost. Först när de kom ut ur ugnen lade jag på bladspenat, prosciutto, pumpakärnor, pinjenötter och solrosfrön. Resterande pizzor dekorerade jag med färsk pesto, chevré och flytande honung. Jag bakade pizzorna i ugnen i 250 grader i 10 minuter.

I'm quite sure that even a real italian guy would approve of these delicious healthy pizzas. If not, well then I cannot guarantee that I'll approve of his opinion... These are awesome and of course childishly easy to make, as always when it comes to what I'm trying to achieve in my kitchen. Wanna know how I made the pizza dough? (For 5 medium-small pizzas) Dissolve 50 grams of yeast with 3 deciliters of lukewarm water. Add about 6-7 deciliters of wholegrain spelt flour, a pinch of salt and 3 tbsp of olive oil. Knead the ingredients into a dough. Cover with a cloth and allow to rise for 20 minutes. Roll out on a baking sheet and add the topping. Perhaps one of the following: For half of my pizzas I used chevré (goat cheese), precooked beets in slices, acai honey and a fresh homemade pesto. I sprinkled some pumpkin seeds, sunflower seeds and pine nuts on before serving them. On the other half of the pizzas I made a tomato sauce that I cooked on a pan on low heat for about 15 minutes with some garlic, chopped onions and some fresh basil leafs, salt and pepper. Then I topped it off with some grated cheese before sending them into the very high tempered oven( 482°F. ) for ten minutes. Before serving the pizzas I added some prosciutto, spinach leafs and drizzled some olive oil on top. Amaaaaaazingly simple and mind-blowingly delicious. Be sure to use organic ingredients and you'll see that the flavors will be a lot more intense.
